Sausage and Tomato Pasta in One Pot

Hi guys, apparently there is an Antarctic polar vortex happening here in Australia. Similar to the Arctic polar vortex a few years ago in North America… except less cold. Actually, everyone’s complaining that it is super frosty at 3 degrees Celsius… Clearly, they haven’t lived through Snowmageddon with temps of -40C/F back home!

Sausage and Tomato Pasta in One Pot: I was in the middle of a flurry of errands so I needed something that I could throw in a pot and forget about for a few minutes.

Ingredients: 500g penne
500g tomato and basil sausages, cut
500g herb and garlic sausages, cut
750g cherry tomatoes, halved
1 onion, diced
5 cups water
500g Parmesan cheese, shredded

1. In a large pot, put all the ingredients sans the cheese.IMG_0575
2. Bring to a boil and simmer for 10 minutes, stirring to make sure it doesn’t stick to the bottom.

3. Stir in the cheese, let it cool.

4. Serve.
